4 cups of milk
Juice of half a lemon
2 tbsps ghee
3 Cardamom seeds crushed
1/4 cup raisins
1/4 cup cashew nuts
1/4 cup almonds
1/4 cup pistachios
2- 3 dates sliced
4 cups grated carrots
3/4 - 1 cup sugar
Boil the milk separately 2 cups in each pot. In one add some lemon juice. Drain the curdled milk. In a wide saucepan add the ghee, followed by the raisins and all the nuts. Saute briefly and then add the dates. Add the carrots and cook for a few minutes before adding the 2 cups of boiling milk. Cook uncovered for about 10 minutes till the milk starts to evaporate. Blend the milk solids so it's nice and creamy, keep aside. By this time the milk would have almost evaporated and the carrots will be nice and soft. Remove a few tbsps of the mixture and blend. This will add a nice creaminess to the halwa and contrast beautifully with the crunch of the carrots. Add the blended milk solids as well. Finally add the sugar to your taste. Some carrots are sweeter than others so taste before you add the sugar. Serve with chopped nuts as a garnish.
