Arabic inspired party salad


This salad looks like a party and tastes like one too! I was born in the Middle East and love the taste of all the ingredients like Zaatar and Hummus. This salad is a real tribute to the tastes and colors of the region of my birth.

2 Arabic Pitas
1 tbsp Olive Oil
2 tbsps Zaatar spice
200-300 gms Halloumi cheese
1 cup mixed Arugula & Baby Spinach
1 cup chopped flat leaf parsley
300 gms halved grape tomatoes
300 gms cucumber cubed
1/4 cup cubed pickled turnips
1/4 cup fresh thyme & oregano
1/4 cup chopped bottled red pepper
1/4 cup sliced green olives
1/4 cup sliced black olives
1/2 cup soaked bulgur wheat

Salad dressing
2 tbsps olive oil
Juice of 1 lemon
1/2 tbsp smoked paprika 
1/2  tbsp sumac
1/2 tbsp pomegranate molasses
pinch of salt

Soak ½ cup of bulgar wheat with double the quantity of water. Cover and leave to fluff up for a half hour.


Bake the pitas for a  few minutes and brush witholive oil and sprinkle with Zaatar. Grill the halloumi till there are grill marks on the cheese and flip over.


Combine all the ingredients in a bowl – arugula & spinach, parsley, oregano, thyme, tomatoes, cucumber, pickled turnips, chopped red pepper, green and black olives. Add the bulgar wheat and toss.


Make a simple dressing by combining the olive oil, lemon, paprika, sumac and pomegranate molasses and whisk. Lightly dress the salad and reserve the dressing for the side.


At the bottom of a platter lay out the pita bread torn into wedges, top with the salad and top with cubed halloumi.
