Green Beans

Its time to revive the ol’ 100 recipe K-challenge! And this time I’m testing out a recipe from my dear friend Shreeti Kohly. It turned out delicious, great as a side or even a main if you’re vegetarian.

400 – 500 gms washed and cleaned green beans chopped in little circles.
1 tsp Sabji Masala(vegetable spice) or Pav Bhaji masala
1 vegetarian soup stock cube

2 dried red chillies preferably Kashmiri
¼ tsp mustard seeds
½ tsp turmeric powder.
1 medium onion sliced
1 medium chopped tomato
1 tsp fresh ginger and garlic finely chopped.
1 bouillon cube
3-4 tbsps ground or grated fresh coconut(optional)
Tiny bit of water
Salt to taste

Fry mustard seeds and red chillies in hot oil. Add onions till golden brown. Add ginger garlic, tomatoes, turmeric, vegetable spice and bouillon. Cook the ingredients together for a few minutes till it makes a nice paste. Add french beans and very little water and cook covered for a while till tender. Add coconut and cook further for 5 minutes with the lid off.
