Bread pudding: A yummy favorite

This is one of my favorite things to make. Unlike your standard recipe bread pudding, the addition of caramel, orange and pistachios make this truly unique.


Ingredients
6 slices day old white bread crumbled include crusts
2 cups milk
1 cup sugar
Extra ¼ cup sugar
4 eggs beaten
1 tbsp vanilla essence
½ cup sliced unsalted pistachios
1 tbsp orange rind (roughly from one orange)
Juice of 1/2 an orange optional





Instructions
Heat the oven to 350 degrees. Grease the pan. Sprinkle the 1/4 cup of sugar and let caramelize till golden brown in the oven. This should take about 1 hr. 

In a large bowl, add the bread and soak it with the milk, vanilla and milk. Beat eggs one at a time and mix it all together. Add the nuts and orange rind.

Once the caramel is golden brown, remove from the oven and pour the bread pudding mixture over it and bake for another 1 hour. When the pudding is done, remove from the oven and squeeze the juice of half an orange over it. Cool before slicing. This can be served warm or cold. Tastes great with whipped cream!

  1. This sounds fab... I sometimes do a bread butter and jam pudding... you spread the jam and butter on both sides of thick farm house bread. Marmalade works best!
    I throw in some run soaked raisins on the top!!!
    Will try yours... the nuts are tempting.
