My friend made this salad for a birthday party once. It was so delicious that I had to try it for myself. The dressing in this salad is outstanding and very versatile. I could easily smear it on bread or add some olives to it and make it a sundried tomato and olive tapenade. I'm pretty sure it would also make an amazing chicken or fish marinade.
I amended the ingredient quantities to make it more economical.
Pasta
500 gms fusili (any pasta will do)
1 tsp salt
Good olive oil
1pound ripe tomatoes, medium-diced (4-5tomatoes)
3/4 cup good black olives, such as kalamata, pitted and sliced
200 gms good feta cheese cubes and pressed down.
8 sun-dried tomatoes in oil, drained and chopped
I tbsp of reserved oil from the sun dried tomatoes.
Dressing
5 sun-dried tomatoes in oil, drained
2 tablespoons red wine vinegar
6 tablespoons extra virgin olive oil
1 garlic clove, diced
1teaspoon capers, drained
1 teaspoon kosher or sea salt
3/4 teaspoon freshly ground black pepper
Garnish
1 cup freshly grated Parmesan or Asiago
1 cup packed flat-leaf parsley, chopped
Cook the pasta in a large pot of boiling salted water with a splash of oil to keep it from sticking together. Make the dressing by combining all the ingredients in a blender. When the pasta is cooked, drain and toss with oil fron the sundried tomatoes. Once the pasta is cool, toss with fresh and sundried tomatoes, feta and olives and dressing. Finally add the Parmesan and parsley.
