My favorite all time quick Indian stir fry
545 gms Tiger shrimp shelled and deveined
I potato chopped in cubes
1 tomato chopped in cubes
1 medium red onion
1 tsp garlic paste
1 tsp ginger paste
½ tsp chili powder
½ tsp turmeric(haldi) powder
½ tsp cumin(jeera) powder
salt
pepper
Heat some oil in a pan and fry the potatoes till golden brown, remove and keep aside. Add the onions, fry till golden brown. Remove and keep aside. Sear the shrimp and add all the powdered spices and ginger and garlic paste, salt and pepper. Add the tomatoes, cover and cook for 5 mins. Add the potatoes and tomatoes and cook for another 7 mins. Finish with chopped coriander.
