Spiced Cauliflower - Gobi Masala


I've hit my holistic limit with vegetarian food during lent but I must go on so I decided to cook up some gobi masala for dinner. I like to fry the gobi just so it caramelizes a bit.


1 gobi(500 gms) cut in florets.
1 large onion chopped
2 green chillies
1/2 tsp red chilli powder
1/2 tsp turmeric powder(haldi)
1 tsp cumin seeds (jeera)
1 tsp cumin powder
1 large tomato finely chopped
1/2 cup chopped coriander
Salt
Pepper
4 - 5 tbsps oil


Heat some oil - fry the onions, chillies and jeera seeds. When golden brown remove and keep aside. Add some more oil and add the cauliflower florets. Fry till slightly brown. Add all the ground spices, salt and pepper. Remove from pan and keep aside. Add chopped tomato, cover and cook till mushy. Return the cauliflower and onion to the pan, cover and cook for 7 - 10 mins. Add chopped coriander.
