Lazy Balsamic Baked Fish
This was the outcome of a lazy evening and trying to whip out something fancy out of pantry items. We all have those days. I used frozen fillets, but fresh would be way better.
5 -6 Basa fillets thawed.
100 ml Olive oil
50 ml balsamic vinegar
1tsp paprika
Sea salt
Pepper
1/2 onion sliced
1/2 cup antipasto sliced - olives, peppers, garlic
Carrots optional
Preheat the oven to 350 degrees. In a large baking dish, place the onions at the bottom. Layer the fish over. Mix together the oil, balsamic vinegar, paprika, salt and pepper. Pour over the fish. Throw the sliced antipasto over. Bake for an hour. Throw some carrots in in the last 15 mins. Serve over pasta or rice.
