Pan Rolls



These were a fave in my household thanks to my dear Grandma Annie Pereira, God rest her soul. Pan rolls are made with a handmade crepe like batter. You can fill the roll with anything cooked ground beef, chicken, shrimp, roll it like a spring roll, dip in egg wash, coat with breadcrumbs and fry. My mom and I made ours with ground beef and you're welcome to try it, just say a prayer for my Mama's soul. Luckily my mom was here to carry on the tradition!

Ingredients
Ground Beef filling
2 pounds regular ground beef
2 - 3 tbsps ginger and garlic paste
1 large red onion finely chopped
2 green chillies chopped
1 tsp ground red chilli powder
1 tsp ground Cumin
1 tsp ground black pepper
1 tsp Garam masala
1 cup cooked peas
Oil
Water
Salt to taste

Crepe batter
2 cups all purpose flour
2 eggs beaten
1 - 2 cups water
Salt
oil for frying

1 egg for wash
Breadcrumbs


Ground Beef filling
Heat some oil in a saute pan. Add the onions and chillies and fry till golden brown. Add the beef and brown it. Add the ginger and garlic paste and all the other ingredients except the peas, add a little water cover and cook for 10 mins. Add the peas and cook for another 5 - 10 till the ground beef is well cooked. Cool.

Crepes
Beat the eggs and add the flour and salt, adding water in between to make a pouring consistency batter.
Heat and grease a non stick pan about 8 inches in diameter. Pour in some of the batter and  make a crepe. Cook for about a minute, do not flip over. Remove onto a wooden board and leave to cool for a minute.
As soon as the crepe is cooled, add some filling to one edge, roll, tuck in the sides and roll again …line them all up. When you've filled them all either dip them in beaten egg(I prefer to brush it - less messy), roll it in breadcrumbs and shallow fry the rolls on all sides. Enjoy!
