Every now and then I get really lazy to grocery shop and I find myself wondering
what to cook. This curry is a fantastic option and does not take too long to prepare.
1 onion finely chopped
3 green chillies finely chopped
2 tbsps ginger garlic paste
2 tsps East Indian masala + 1 tsp Cumin powder – this is a unique spice
that is difficult to find, if you do not have this just substitute with the
below.
1 tsp Red Chilli powder
1 tsp Turmeric powder
1 tsp Coriander
1 large tomato finely chopped
Chopped coriander
Salt & pepper
Water
Boiled eggs.
Fry the onions till golden brown, add the chillies, the ginger and
garlic paste followed by the powdered spices. Cook for a minute and add the
chopped tomato. Cover and cook, stirring frequently. If the gravy is too thick,
add water a tablespoon at a time. When you’ve a achieved a nice consistency,
slide the preboiled eggs in. Cover and cook for a few more minutes. Garnish
with coriander and serve.
