Dry spiced potatoes

At the very last minute, we decided to host a IIFA viewing party. My friends and family are used to receiving a spread and who am I to disappoint? Some of the best recipes come from sheer panic or needing to be creative with your ingredients. Another good example of this is my Peas with Mushroom and mint.

4 potatoes quartered and sliced
2 red onions finely sliced
1 red dry Kashmiri chilli
1 tsp jeera powder
1 tsp chilli powder
Salt/ pepper

Fry the onions till golden brown and remove from heat. Fry the potatoes in the same oil. Remove some of the excess oil and add all the dry spices. Add the onion and cover the pot for a few minutes so it can cook with the steam.
