One lazy Sunday
years ago, I was flicking through my channels and came across the show
'Cookery course'. Gordon Ramsay prepared a pasta using pantry
ingredients, sardines, sun-dried tomatoes, a slice of bread and some
pasta to make a delicious lunch. Before the show ended, I was already up
on my feet, pulling the ingredients that I needed out of my cupboards
to prepare a lunch that my family adored. Of course this was years ago,
since I started my YouTube channel, there is no such thing as a lazy Sunday
but I have made this dish many many times and it's about time to share
it with you. This recipe also includes Shrimp and I always at any given
time have a bag sitting in my freezer, but you could substitute Lobster
or Crab.
I thought the sauce may be a bit
'fishy' for my kids, but to my delight they loved the deep flavor of
the sauce and find it totally unique. As a treat, I've paired this with a
Crab and Parsley Garlic bread, you can find that recipe here.
Ingredients
400 gms Spaghetti
1 tin Sardines
1 red onion finely chopped
3 green chillies slices
2 tsps chopped garlic
1 slice of bread crumbled
Olive oil
5 sun-dried tomatoes, chopped
1 tsp capers
1 1/2 cups diced tomatoes
2 tbsps parsley
2 lbs Shrimp (can use as much as required)
Salt
Pepper
Pinch Chilli flakes
Clean the Sardines by removing the center bone
Clean and devein your shrimp and marinate with some salt, pepper and chilli flakes
Crumble your bread by hand or use a food processor
In a heated frying pan, add some Olive oil, 1 tsp of garlic and the breadcrumbs. Fry till golden brown and remove from heat.
In a heated saute pan, add some Olive oil and sauté the onion followed by a tsp of garlic and the green chillies
Add the sundried tomatoes and the sardines and mash it with the back of your spoon
Add the tomatoes and capers, cover and cook
Add cooking cream to make your sauce creamy, this is optional
Cook the pasta and drain
Saute the shrimp
Toss the pasta into the sauce, adding a little oil from the sun-dried tomatoes
Add some fresh chopped parsley
Top the pasta with the shrimp, sprinkle the fried breadcrumbs and serve.
It's good to know that the sardines didn't leave a very "fishy" taste. This would be a great option for a quick dinner!
