Beef with Barley & Potatoes


It's been a while since I updated this blog so my sincere apologies. My husband picked up the most beautiful piece of boneless beef and given it's cold outside, I decided to make something really warm and comforting. I started this off on the stovetop but left it simmering all night in my slow-cooker.

2 pounds boneless beef
2 large onions sliced
2 green chillies
2 tbsps ginger and garlic paste
1 large tomato finely chopped
2-3 star anise
1 tsp each - chilli powder, cumin powder, coriander powder and Garam masala(all spice)
2 potatoes quartered
1 cup beef stock
1 cup barley boiled for 20 mins and drained.
Salt
Oil


In a sauté pan, brown the onion and chillies. Lightly fry the potatoes and remove from pan. In the same oil add the meat and leave to brown. Add the salt and spices. When meat is browned on both sides, add the ginger and garlic paste and chopped tomato. Cover and cook for 20 mins. Add the reserved onions, potatoes and stock. Cover and cook for another 10 mins.

Remove potatoes if transferring to a slow cooker overnight and refrigerate
Slow cook meat on low for 5-6 hrs. When ready, add the potatoes back in and stir in a cup of cooked barley.
