Green Tomato Chutney

When life hands you lemons you make lemonade, when your mother throws tomato seeds all over your garden beds mid summer and you have yourself a crop of green tomatoes, you attempt to make green tomato chutney.

I suppose you could try canning it as a preserve but I made a small 'make to try batch' the results were delicious. I can see myself topping a savory canapé or enhancing a curry with a dollop of spicy goodness.


1 onion
2 green chillies
3 cloves of garlic chopped very fine
1 tsp Mustard seeds
2 tbsps Curry leaves chopped
1 tsp Cumin seeds
1 tsp Chilli powder
1 tsp Cumin powder
1 tsp Turmeric powder
Salt
Pepper
2 tbsps brown sugar
500 gms chopped green tomatoes
Vinegar



Fry the onions garlic and chillies and add the cumin, mustard seeds and curry leaves. Add the spice powders and stir. Add the brown sugar. Add the chopped tomatoes and cook for 15 mins. Add salt and pepper to taste. Cool and mix in the vinegar.
