Delicious Arabic Pizza


This is one of my all time favourite recipes. I developed this when I competed on the hit TV show, Come Dine With Me Canada. Since then I had lost the recipe due to a hard drive crash. Luckily for me one of my friends had saved the print out all these years and I was able to salvage this amazing recipe. You can prepare your own pizza dough or buy it ready prepared, but I have to tell you making a batch of dough is easy and so worth the effort. The topping is a chicken or turkey mixture and the whole pizza is cooked in an oven to middle eastern flavoured perfection!

Makes 4 medium pizzas and about 60 mini pizzas

Ingredients

Pizza Dough
2 cups whole wheat flour
1 1/2 cups all purpose flour
7 tsps instant dried yeast
Pinch of sugar
Salt
Warm water
Splash of Olive Oil
Additional flour for dusting and rolling

Topping
1 pound ground chicken or turkey meat
1 tsp smoked paprika
1 tsp dried oregano
1 tsp sumac
1 tsp ground black pepper
Salt
1/2 red onion chopped fine
1/2 red tomato deseeded chopped fine
1/2 cup chopped mint
1/2 cup chopped parsley
1 1/2 tbsps pomegranate molasses

In a bowl add the yeast and sugar and top with a half cup of warm water. Leave till frothy

In a stand mixer add the flours and salt and mix.

Add the yeast mixture and enough water in slow additions to make a soft and supple dough.

Oil a bowl, add the dough ball, rotate to coat with oil and then cover with cling film.

The dough can take anywhere from a few hours to overnight to double in size when stored in a warm, dark oven.

Mix all of the topping ingredients well together.

It's a good practice to fry a small sample of the topping to check for salt and seasonings.

When the dough is doubled in size, remove and lightly knead using extra flour

Dust with flour and roll out into a single pizza round or cut out little mini pizzas with a cookie cutter as per your preference.

Add a teaspoon of the topping to each pizza base and smear over the surface.

Bake in a 350 degree oven for 10 – 15 mins till cooked.

If using multiple sheets, rotate them to ensure all pizzas get cooked evenly.

Garnish with more fresh herbs.

Red Pepper Hummus topped with Chicken Shawarma


Red Pepper Hummus

1 (15 ounce) can chickpeas
2 roasted red peppers (bottled)
1/4 cup tahini (sesame paste)
Juice of 1 lemon juice
2- 4 tablespoons olive oil
Splash of hot sauce
salt, pepper
Water if required

1 oz chicken breast - marinate in shawarma spice or just marinate with lemon juice, dried oregano, paprika, all spice powder and pepper.
Olive oil
Pinch Smoked Paprika
Chopped parsley
Chopped Picked turnips(found in most Arabic stores)

Grind all the hummus ingredients to a smooth paste. Shallow fry the chicken. Smear the hummus at the bottom of a serving bowl. With the back of a spoon make a little well in the center and add olive oil. Sprinkle with the chicken, parsley, chopped turnip and pinch of smoked paprika.

Serve with Pita chips or crackers.

Note: Hummus tends to dry if left in the open, be sure to cover this with a thin film of Olive oil.

Chicken 65 Wontons



Who doesn't love Chicken 65? But convert this into a small crispy appetizer version and you have magic!


1 lb Ground Chicken 65 recipe
100 Wonton shells
Flour paste - flour and water
oil for frying

Prepare the filling as per the recipe instructions and cool. Add the flour paste to the wonton to two sides of the wonton making a V shape. Add the filling seal to male a triangle shape. Add more flour to the two edges and  pinch together. If freezing the wontons for a later time, freeze them in a single layer and then bag them.

Lahori Fish Tacos


Combining the flavors of Pakistan & Mexico, you get one delicious party appetizer or snack!

1 lb Lahori Fish recipe

For Tortillas (makes about 40)
2 cups all purpose flour
2 cups durum flour
2 tsps oil
salt
water

Combine all the ingredients together to make a dough. Cover and rest for a half hour. Using a well floured board, roll these out and cut using a cookie cutter. Cook on a skillet. These can be stacked, covered and stored till you are ready to serve.

Lime crema
250 gms sour cream
juice of 1/2 a lime
Lime zest
salt

Mix these all together to make a simple crema packed with punch.

You will also need some chaat masala, chopped coriander and chilli sauce for garnishing.

To assemble, just lay out the tortillas, add a dollop of crema, a piece of fish in the middle and garnish with a sprinkle of chat masala and coriander and drops of chilli sauce.







Chicken Tikka Tarts - Party Appetizers


I love taking an existing recipe and turning it into something new! Everyone loves my delicious Chicken Tikka Masala, so I thought why not turn this into a delicious and hearty appetizer?

1/2 recipe Chicken Tikka Masala
40 - 50 premade mini tart shells - cook according to package instructions
250 gms Philadelphia or any other cream cheese
1 egg
salt
chopped coriander

Warm the cream cheese so it's nice and soft and fold the Chicken Tikka Masala in. Add an egg and some salt. Spoon into the cooked and cooled shells. You can either freeze these for later or stick them in a 350 degree oven for 7 minutes. Top with chopped coriander.
